For Oolong Tea leave the hot water to cool for 2 to 3 minutes, for Green Tea leave to cool for 3 to 4 minutes and for White/Yellow Tea leave to cool for 4 to 5 minutes - all times are approximate. Portion Quantity: The old adage is one, slightly heaped teaspoon per person and one for the pot. These days teapots vary considerably in capacity, so ONLY add the extra if it’s a large teapot or to taste. If the leaf is Gunpowder or small / flat sized then less is more - bulky leaf will require more on a teaspoon than smaller, flatter style leaf. It is vital to remember that the final ratio of amount of tea to use and the brewing time must be to taste - your taste!
