Oolong Leaf Tea 80 to 85° C 1 to 3 minutes + 4 to 6
Black Leaf Tea 95 to 100° C 2 to 5 minutes + 1 to 2
Pu Erh Leaf Tea 95 to 100° C 2 minutes + several
Tisanes 95 to 98° C 3 to 6 minutes to taste
Herbal Infusions 95 to 98° C 4 to 8 minutes + to taste
 
Temperature Tip: Take the kettle off the heat before it gets to boiling point, leaving some spare oxygen in the water. For Oolong Tea leave the hot water to cool for 2 to 3 minutes, for Green Tea leave to cool for 3 to 4 minutes and for White/Yellow Tea leave to cool for 4 to 5 minutes - all times are approximate.
Portion Quantity: The old adage is one, slightly heaped teaspoon per person and one for the pot. These days teapots vary considerably in capacity, so add the extra if it’s a large teapot or to taste. It is vital to remember that the final ratio of amount of tea to use and the brewing time must be to taste - your taste!
